Rapini LEAF - Spring Raab

Also known as Broccoli raab, this is a slender stalk vegetable resembling both broccoli and asparagus. The lengthy vegetable is a good source of vitamins K, A, C, manganese, and folate. The leaf, stalk, and flower are all edible and it was originally cultivated for the leaves and roots rather than the head. The taste is said to be bitter and nutty; more almond-like than peanut.

Pairings:
Chilli, garlic, onion, lemon, olives, salmon, chicken.

How to Use:
Sautée or grill.
